This brand is a tribute to the South of Italy and to its fascinating history. INSPIRATION Roman times when Pliny the Old owned the wonderful and special marvels of the land. One of these enchanting places is the Plinian Source. The brand recalls a beautiful almond tree grown near the Plinian source. It’s a tree loved by the Apulian inhabitants. WINE STYLE Enchanting, full bodied and intense that delights sip after sip. APULIA REGION The climate is warm and temperate, with significant rainfall all year round. During the summer the African winds cause rapid and marked rise of the thermometer and high temperature variation. VINIFICATION: In the last ten days of September the perfect ripeness of the grapes is reached and winemaking process starts from the vine. The withering process takes place in the vineyard by cutting the petiole of grapes but leaving them on the vine for about 15-20 days, during this period 50% of their weight evaporate. This will allow for wines with typical notes of ripe fruits, such as plums and raisins. The handpicked grapes are pressed and the fermented. The skins are left in contact with the must for a long period to extract flavours and the characteristic red colour. Subsequently the wine is left to complete the malolactic fermentation; this contributes to the peculliar complexity of this wine.

In the inland areas instead the climate becomes slightly more continental at hilly levels, with moderately cold winters and hot summers. VINIFICATION: The harvested, destemmed and soft pressed grapes make a pre-fermentative maceration at 3-4 °C in order to extract the characteristic aromas; fermentation and macerations last 15/20 days at a controlled temperature 24/26 °C, at the end of this step the alcoholic and malolactic fermentation are completed. The wine obtained is aged in barrels for at least 24 months.

Fumu is inspired by its fumes and peculiarities. Easy name to pronounce, immediate and recognizable: in Sicilian dialect the meaning is smoke. WINE STYLE Intense and easy to drink at the same time, hints of smoked grapes in the finish. SICILY REGION Sicily, the "Land of the Sun," has a Mediterranean climate along the coast, whereas in the inner hilly lands, the climate becomes more continental with moderately cold winters and hot summers. VINIFICATION: Grapes are handpicked upon reaching 19/21 Babo degrees and placed in 2/3 kg drying crates. They are then stored, for about 10 days, in ventilated rooms with controlled temperature and humidity. In these rooms, kilns are lit, small slow burning and flameless combustion ovens, fueled with disused aging barrels that produce smoky clouds that permeate the premises. At the end of the ten days the grapes are smoked and have acquired a natural and refined smoky finish. After the manual destemming of the berries, the vinification process begins with the crushing, maceration and alcoholic fermentation of the grapes at a controlled temperature of 26/28 ° C for approximately 12 days. The malolactic fermentation is completed. Lastly, 30% of the wine is aged in French and American wood barrels.
